Twice Baked Potato Salad

Ingredients

  • 8 medium potatoes, scrubbed & cubed
  • 1 cup mayonnaise
  • 12 oz. FRENCH ONION DIP
  • 3 cups CHEDDAR CHEESE
  • 1/2 pound bacon bits*
  • 6 green onions, sliced thin including greens  

Directions

*Making bacon bits- Cut 1 pound in 1/2 then cut the 1/2 into small slices then dice. Fry in a frying pan till golden brown.

Boil potatoes till soft then drain. Place in a large bowl. Add mayonnaise, FRENCH ONION DIP, and 1 ½ cups of CHEDDAR CHEESE. Mix well. Pour into a 9X13 pan. Place on top the rest of the CHEDDAR CHEESE, green onions, and bacon bits. Bake on 350o for 15 minutes or until the CHEESE is melted and little brown.
