Homemade Mac & Cheese

Ingredients:
8 oz elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
2 cups sharp cheddar cheese, shredded
Salt and pepper to taste
Optional add-ins: cooked bacon or sautĂŠed vegetables (like broccoli)

Instructions:
1. Bring a large pot of salted water to a boil. Cook the macaroni until al dente according to package instructions. Drain and set aside.
2. In a medium saucepan over medium heat, melt the butter until bubbly. Whisk in the flour until smooth and cook for about 1 minute.
3. Slowly whisk in the milk, stirring constantly until the mixture thickens and begins to bubble.
4. Reduce heat to low and gradually stir in the shredded cheddar until melted and smooth. Season with salt and pepper.
5. Fold the cooked pasta into the cheese sauce until fully coated.

Serve warm and enjoy a truly merry and cheesy holiday! 🧀✨

Cheesy Amish Breakfast Casserole  
🥓1-pound sliced bacon, diced 
🧅1 medium sweet onion, chopped 
🥚9 large eggs, lightly beaten 
🥔4 cups frozen shredded hash brown potatoes, thawed 
🧀2 cups shredded Cheddar cheese 
🧀 1 ½ cups small curd cottage cheese 
🧀 1 ¼ cups shredded Swiss cheese
 
Directions: 
Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in eggs, potatoes, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into the prepared baking dish. Bake in the preheated oven until eggs are set and cheese is melted, 45 to 50 minutes. Let stand for 10 minutes before cutting and serving.

Meet the Palmer Family of Pigeon Cove Farm — five generations strong and three working together every day in Fulton County. 

💥The Crew: Lonnie & Deb, Brad & Linette, Logan, and Hailey

What They Do:
• Brad & Lonnie run daily + long-term operations
• Logan handles equipment
• Hailey leads breeding + herd health
• Linette & Lonnie care for calves
• Deb & Linette manage the books

🐮The Farm: 540 milking cows (Holsteins, Ayrshires, Jerseys) and 2,000 acres across Fulton & Bedford Counties, plus extensive custom work for neighbors.

🌾What Makes Them Unique: A close partnership with LANCO, innovative manure + water systems, and a modern double-12 parlor.

🫧SRT recently toured the farm—extra special for Program Director Carrie Anderson, who recalls fond memories from spending time around the farm during her childhood and credits her family’s work ethic for her passion for dairy.
