Jesslyn’s family will be enjoying Cheesy Amish Breakfast Casserole this Christmas to recover from a morning of caring for their cows.🐮 She says, “the more cheese the better!” If you agree, try the recipe below!  😋 🧀

Cheesy Amish Breakfast Casserole  
🥓1-pound sliced bacon, diced 
🧅1 medium sweet onion, chopped 
🥚9 large eggs, lightly beaten 
🥔4 cups frozen shredded hash brown potatoes, thawed 
🧀2 cups shredded Cheddar cheese 
🧀 1 ½ cups small curd cottage cheese 
🧀 1 ¼ cups shredded Swiss cheese
 
Directions: 
Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in eggs, potatoes, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into the prepared baking dish. Bake in the preheated oven until eggs are set and cheese is melted, 45 to 50 minutes. Let stand for 10 minutes before cutting and serving.

Meet the Palmer Family of Pigeon Cove Farm — five generations strong and three working together every day in Fulton County. 

💥The Crew: Lonnie & Deb, Brad & Linette, Logan, and Hailey

What They Do:
• Brad & Lonnie run daily + long-term operations
• Logan handles equipment
• Hailey leads breeding + herd health
• Linette & Lonnie care for calves
• Deb & Linette manage the books

🐮The Farm: 540 milking cows (Holsteins, Ayrshires, Jerseys) and 2,000 acres across Fulton & Bedford Counties, plus extensive custom work for neighbors.

🌾What Makes Them Unique: A close partnership with LANCO, innovative manure + water systems, and a modern double-12 parlor.

🫧SRT recently toured the farm—extra special for Program Director Carrie Anderson, who recalls fond memories from spending time around the farm during her childhood and credits her family’s work ethic for her passion for dairy.

🌾I am most thankful for growing up on my family’s dairy farm! Dairy farming and agricultural youth activities are a big part of Lebanon County. Today I want to spotlight another amazing, hardworking dairy farm family in Lebanon County, the Maulfair Family! 

🐮Maulfair Acres is located in Northern Lebanon County and is the farm where David Maulfair was raised. David and his wife Rachel own and manage the farm, and are the parents to our Lebanon County Dairy Maid, Evelyn Maulfair. Evelyn has three younger siblings, Makaylia, Rosalie, and Morgan. The Maulfair’s milk a herd of 80 cows consisting of both Holsteins and Ayrshires, and farm about 200 acres. They have a strong emphasis on cow comfort and milk quality. 🥛 

We are thankful for the Maulfair’s dedication to the dairy industry through the milk they provide from their beautiful cows! 🐄

This week, meet the JoBo Family!

Family is at the heart of JoBo Holstein Farm, a third-generation dairy farm in Gettysburg, Pennsylvania. What began in 1970 with John and Bonnie Hess and just 35 cows has grown into a family partnership with their daughters Joy and Jo, son-in-law Dale, and granddaughter Jocelyn, who are now milking nearly 1,100 registered Brown Swiss and Holstein cows.

✨ Highlights from the farm:
🌾 The family manages 1,000 acres of ryegrass and corn to feed their herd.

👨‍👩‍👧‍👦 Multiple generations work side by side every day—true family teamwork!

🧀 JoBo is a proud pillar of the community, hosting annual farm picnics and tours to connect neighbors with the dairy industry.

💡 In 2023, they introduced SmaXtec bolus technology to monitor cow health and improve herd care.

The JoBo family holds a special place in Bry’s life. This farm sparked her passion for dairy cattle at a young age and gave her cherished memories alongside Joy’s daughter Ellie and the Widerman family, who helped her purchase her first Brown Swiss show heifer. Bry is proud to carry forward that love and appreciation for the JoBo family and their impact on the dairy industry.
While it isn’t always easy, the JoBo family never hesitates to give their all. Their dedication, care, and family spirit truly embody the heart of the dairy community. The SRT extends heartfelt thanks to the entire JoBo family for their hard work, commitment, and lasting contributions to a farm and industry that touches us all. 🥛💛

🐄Welcome to Thank a Farmer Friday🐄

Each Friday of November, SRT will highlight four of the 4,850 Pennsylvania dairy farm families who work tirelessly to provide fresh, wholesome milk for our communities. 

This week, meet the Reichard Family!

Reich-Dale Jerseys proudly represent nine generations of dairy farming tradition in Chambersburg, Pennsylvania. 

They are proud members of the Cooperative Dairy Farmers of America (DFA).
 
💥The Herd:
Currently milking 114 cows — Jerseys, Holsteins, Brown Swiss, and Ayrshires.

 🌾The Farm:
Owning 143 acres and farming 220 acres total
 
🧬What Makes Them Unique:
• A strong focus on genetics and their own breeding program
• Herd averages an impressive 87 points across all breeds
• Numerous All-American and All-Pennsylvania nominations
• Their latest addition — a hoop barn for calves — helps care for the next generation of their herd
 
💙A Personal Connection:
The Reichard family holds a special place in Pennsylvania Alternate Dairy Princess Rebekah’s heart. Having spent many years helping with everyday farm chores, working alongside them at dairy shows, and sharing countless moments on the farm, Rebekah has seen firsthand the dedication, teamwork, and passion that defines this incredible family.
