Annie Hansen’s Cream Puff Coffee Cake

Ingredients

2 cups of flour

3 sticks of BUTTER

4 teaspoons water

2 teaspoons vanilla

3 eggs

3 3/4 cups of confectioners’ sugar

4 tablespoons MILK
Directions
For crust: Combine 1 stick of butter and 1 cup of flour. Stir in 2 teaspoons water, 1 teaspoon at a time. Flatten out dough on a cookie sheet to approximately ¼ inch thick. For filling: In a sauce pan, combine 1 cup of water, 1 stick of butter and 1 teaspoon of vanilla. Bring to a boil. Remove from heat. Add 1 cup of flour and stir. Add 3 eggs, one at a time while stirring continuously (hint- a wooden spoon works best). Spread over the crust. Bake at 375 degrees for 30-35 minutes. Cool. For icing: Combine 1 stick of butter and 1 teaspoon vanilla. Stir in confectioners’ sugar and milk to frosting consistency. Spread over filling.
